Sea Salt and Rosemary French Fries With Quick Honey Mustard

I grew up in a small country town in West Virginia. We had to drive a good way to get an order of fries, so the only time I got to feast on a carton of salty,  oily fries was when we traveled for vacation.

The day came when I move to the “big city” I mean…..fast food everywhere! Though I ate pretty healthy, I had my fair share.

Throughout the years we eliminated more and more bad food for our diet, and the time came when I had to wean my kids from fast food fries.  Did they eat them all the time, no, but I wanted to erase them from their memory.

I made fries for the first time and they were an instant hit! Who wouldn’t like crispy fries with the touch of sea salt and a hint of rosemary?

I think we discount the  potato from the healthy list, but they are rich in vitamins, help prevent kidney stones, high in fiber, and reduce inflammation to name a few! Be sure to buy organic potatoes because pesticides in the soil absorb into the flesh making it hard to wash off. It’s worth the little extra money for a good potato, and worth a little of your time to make these!

Sea Salt and Herb French Fries with Quick Honey Mustard

Fresh fries are really so satisfying. Making them yourself isn't hard at all, and you can customize a great honey mustard sauce, too.

Ingredients

  • 3 large potatoes
  • 1 tablespoon olive oil or refined coconut oil melted
  • 1 ½ teaspoon finely chopped fresh rosemary or thyme or use dried
  • ½ teaspoon sea salt or more to taste
  • ½ teaspoon black pepper

Honey Mustard

  • 3 tablespoon plain yellow mustard
  • 1 tablespoon Local honey or more to taste
  • teaspoon ground black pepper
  • 1 small garlic clove grated

Instructions

Fries

  • Preheat oven to 400
  • Line a cookie sheet with parchment paper.
  • Wash the potatoes and cut in half lengthwise. Then cut each half in slices lengthwise, then into slices to resemble French fries.
  • Spread fries over lined cookie sheet.
  • In a small bowl mix olive oil and spices. Mix well and pour evenly over fries. Toss so they are evenly coated.
  • Bake at 400 for about 20-30 min or until lightly browned.

Honey Mustard Sauce

  • Whisk together mustard and honey
  • Stir in black pepper.
  • Grate in garlic clove.
  • Mix and serve with fries!
