Fudgy Chocolate Avocado Cookies

I’m always thinking of ways to sneak something healthy into my kid’s food. I have to admit, I feel like such a prankster when I’m doing it. One time I made Black Bean Brownies. I served them up like they were getting the treat of the century. They gobbled them up and asked for more. After they ate them and the only thing left was the crumbs on their faces, I revealed to them that they had a whole can of black beans in them (bwahahaha). Why do I love that so much?….. I guess it’s gratifying to know I snuck something into their food they weren’t likely to eat, that’s why I wanted to make these fudgy chocolate avocado cookies!

I’ve seen a few posts lately on chocolate frosting made with avocado. It inspired me to make a dessert with this superfood. I decided to go with a chocolate cookie, besides you can’t go wrong with chocolate! So here they are- the fudgy chocolate avocado cookies!

 

The first go at these cookies were ok but needed some work, so I made a few adjustments and the result was a delicious fudgy, chocolatey cookie with no wheat flour or dairy! Instead of full of ground oat, flax, and yes, a whole avocado!

They are full of potassium, fiber, and omega 3’s! They also lower bad cholesterol, promote healthy bones, improve absorption of nutrients, and help reduce inflammation in muscles and joints. Avocados are rich in protein to build strong bones, muscles, and skin. The monounsaturated fat in avocados helps us keep a healthy heart!

It wouldn’t hurt to incorporate this healthy fruit into our diet. I hope you enjoy this recipe as much as my family!

Fudgy Chocolate Avocado Cookies

No wheat or dairy in these cookies! Oats and avocado make them a truly fudgy treat.

Ingredients

  • 1 avocado smashed use large Hass Avocado
  • 1 Chia seed egg 3 tablespoon water + 1 tablespoon Chia seed(could also use regular egg, or flax egg.
  • ½ cup dark brown sugar packed
  • 1 ½ cup oat flour you can make this by grinding oats
  • ¼ teaspoon salt
  • ¼ teaspoon baking soda
  • 4 tablespoon refined coconut oil melted
  • cup cacao powder
  • 1 teaspoon aluminum-free baking powder
  • ½ cup walnuts or pecans optional
  • cup chocolate chips optional

Instructions

  • Preheat oven to 375.
  • In a Nutri-Bullet or food processor add oats. Grind until you achieve a smooth powder.
  • Cut avocado lengthwise, pull apart, remove seed and with a spoon scoop out the inside of the avocado into a medium mixing bowl, mash well with a fork.
  • Melt coconut oil in a saucepan, let cool slightly and mix into avocado with a mixer or wooden spoon.
  • If using Chia egg, mix chia seeds and water in a small bowl and let set a couple of minutes.
  • Add egg, and sugar- mix until smooth.
  • In a separate bowl mix oat flour mix, salt, baking powder, baking soda, cacao powder, nuts, and chocolate chips.
  • Incorporate well by mixing with a wooden spoon.
  • With a wooden spoon mix dry ingredients into wet.
  • Spoon out heaping tablespoons of batter onto a cookie sheet. You can use the back of the spoon and flattened the top if you want a more flat cookie.
  • Bake 12-15 min

Notes

*I find that these hold up best stored in a baggie or container and refrigerated.
