“After spending the last year feeling lethargic and generally unhealthy, my 73 year old mother-in-law (Sherry) and I, decided to participate in the 21-Day Clean Eating Challenge in May, 2019. My weakness is baked goods; cookies, pies, muffins, you name it. For Sherry, she spent a lifetime of eating what a single mother with four boys could afford, and needless to say, had no idea that there is such a thing as “clean eating”. We knew that we had come to the end of the line on ignoring our bad habits, and needed to take our health seriously.
As we embark on this new way of living, Elke has provided us with helpful and insightful information and recipes. Armed with Elke’s knowledge and her website at my fingertips as I grocery shop and try new healthy recipes, a transformation has taken place! After just a few days, both of us noticed more energy, a decrease in cravings for sugar and processed foods, and a craving for fruits and vegetables. We also started feeling incredibly inspired and excited about how good we were feeling, which has prompted us both to embrace exercise, too!
Along with the clean eating, I have been spending 30-60 minutes a day exercising under the instruction of Tim, Elke’s husband. Sherry, who previously suffered from joint and back pain, never wanted to exercise, because it exacerbated her pain. Now that she has been eating clean, her joint and back pain have diminished, and where she used to complain of a vague and almost indescribable discomfort in her “insides”, these symptoms have disappeared! She now joins me for long walks with our dogs, works out alongside me at the gym, and navigates the 2 flights of stairs in our home several times a day, where she used to avoid leaving her room because she didn’t want to walk up and down the stairs.
After the 21 days, Sherry has lost 8 lbs, doesn’t hate the way she looks in the mirror, and continues to feel wonderful, and enjoy continually learning and practicing healthy habits. I have lost 4 lbs, 2 inches from my waste, 2 inches from my thighs, and 1 inch from my biceps. I feel invigorated and full of energy, and look forward to preparing healthy meals and working out every day!
