Layout your lollipop molds and place the sticks in.
In a small saucepan measure in honey, the zest of one lemon, lemon juice, ginger, and immune boost.
Heat on medium heat and place your candy thermometer in the pan like pictured above.
Heat to a boil while whisking often. Heat until the thermometer reaches 300 degrees. (This took me about 10 minutes.) then turn off the heat and fill your molds.
With a spoon, spoon into the lollipop molds. You may need to adjust your sticks as it hardens.
Allow to cool completely, then pop the lollipops out and dust with a little powdered sugar or stack them with waxed paper. Store with wax paper separating them in a cool dark place. If your kitchen is hot you may want to store them in the fridge.
