These easy immune-boosting lollipops and fun to make and work great for cough and sore throat!

Equipment

  • candy thermometer
  • Lollipop molds

Ingredients

  • ½ cup honey
  • zest of one lemon
  • 1 ½ tablespoon lemon juice
  • ½ teaspoon dried ginger or grate fresh ginger
  • 4 droppers immune boost optional - will link this in the recipe notes.

Instructions

  • Layout your lollipop molds and place the sticks in.
  • In a small saucepan measure in honey, the zest of one lemon, lemon juice, ginger, and immune boost.
  • Heat on medium heat and place your candy thermometer in the pan like pictured above.
  • Heat to a boil while whisking often. Heat until the thermometer reaches 300 degrees. (This took me about 10 minutes.) then turn off the heat and fill your molds.
  • With a spoon, spoon into the lollipop molds. You may need to adjust your sticks as it hardens.
  • Allow to cool completely, then pop the lollipops out and dust with a little powdered sugar or stack them with waxed paper. Store with wax paper separating them in a cool dark place. If your kitchen is hot you may want to store them in the fridge.

If you wanted to make these like cough drops v/s lollipops, you could drop spoonfuls in the size you would like onto wax paper and let cool!
