Fudgy Chocolate Avocado Cookies

No wheat or dairy in these cookies! Oats and avocado make them a truly fudgy treat.

Ingredients

  • 1 avocado smashed use large Hass Avocado
  • 1 Chia seed egg 3 tablespoon water + 1 tablespoon Chia seed(could also use regular egg, or flax egg.
  • ½ cup dark brown sugar packed
  • 1 ½ cup oat flour you can make this by grinding oats
  • ¼ teaspoon salt
  • ¼ teaspoon baking soda
  • 4 tablespoon refined coconut oil melted
  • cup cacao powder
  • 1 teaspoon aluminum-free baking powder
  • ½ cup walnuts or pecans optional
  • cup chocolate chips optional

Instructions

  • Preheat oven to 375.
  • In a Nutri-Bullet or food processor add oats. Grind until you achieve a smooth powder.
  • Cut avocado lengthwise, pull apart, remove seed and with a spoon scoop out the inside of the avocado into a medium mixing bowl, mash well with a fork.
  • Melt coconut oil in a saucepan, let cool slightly and mix into avocado with a mixer or wooden spoon.
  • If using Chia egg, mix chia seeds and water in a small bowl and let set a couple of minutes.
  • Add egg, and sugar- mix until smooth.
  • In a separate bowl mix oat flour mix, salt, baking powder, baking soda, cacao powder, nuts, and chocolate chips.
  • Incorporate well by mixing with a wooden spoon.
  • With a wooden spoon mix dry ingredients into wet.
  • Spoon out heaping tablespoons of batter onto a cookie sheet. You can use the back of the spoon and flattened the top if you want a more flat cookie.
  • Bake 12-15 min

Notes

*I find that these hold up best stored in a baggie or container and refrigerated.
