In a medium-size mixing bowl, measure out all ingredients except chocolate chips into mixing bowl.
With a hand mixer, mix until all the ingredients are well incorporated.
With a wooden spoon, mix in ¼ cup chocolate chips.
Line a loaf pan with parchment paper.
Pour ice cream into lined pan, and place in the freezer.
About a half hour or so after you start freezing, sprinkle reserved chocolate chips on top.
Continue to freeze for about 5-8 hours or until hardened all the way through.
When you're ready to serve, let set on the counter for a few minutes to become soft enough to scoop
