I don’t think anyone loves ice cream quite like my husband. There have been times a half-gallon could potentially be gone in a day. I hear the kids yell out “daddy ate all the ice cream!” haha, well, none of us are very surprised. He just loves it, and he loves this No-Churn Peanut Butter Maca Ice cream just the same!
There comes a time, I think, where we need to examine our diet and see how we can get better. It’s not always about taking something out of our diets completely but seeing how can we still eat that thing we love but in a healthier way. Every time we make something homemade we have the potential of taking something unhealthy and making a healthier version of it. Let’s take a minute and look at the advantage of making your own homemade ice cream.
Coconut milk is healthier than cows milk.
Let’s be honest, if your buying ice cream you probably aren’t buying organic, or maybe you’re not even checking the ingredient list. What’s that mean for you? The ice cream your consuming is probably using conventional cream. The cream is probably ultra-pasteurized killing any good qualities the milk originally had. Also, when milk or cream is homogenized it changes the good fat in the milk to bad fat, and natural sugars into bad sugar. In short, your eating unhealthy fat with unhealthy amounts of sugar. To top that according to Dr. Axe a study was done which showed a glass of milk has up to 20 different chemicals and medications in it! Not to mention the main reason I stopped buying convention milk products…… I read that blood, and pus routinely end up in cows milk from sick infected cows! Yuk! Coconut milk sound good yet? Well, it should consider its antibacterial, antiviral, aids in weight loss, anti-aging, heart-healthy, and anti-inflammatory! Score! Just in the main ingredient you’re getting skinnier and fighting inflammation!
You might find that your ice cream has Carrageenan.
Carrageenan is a harmful food additive that’s used as a binder or as a thickening agent. This harmful additive can cause digestive issues, inflammation, liver cancer, and even birth defects! This harmful ingredient could show up in a lot of places like baby formula, and even your toothpaste. Check out my homemade toothpaste here
Considering we won’t be adding carrageenan to homemade ice cream, we don’t have to worry about that.
You can be in charge of how much sugar you’re using!
The sugar addiction in the world is real. At the end of the day, most of us have felt the regret of a sugar overload, and that’s just the desserts or sugary drinks we’re consuming. We aren’t thinking about things like crackers, condiments, and “junk food healthy foods” like yogurts and granola bars….but it adds up quick. I checked out a very basic simple ingredient vanilla ice cream from the grocery store. It had 18 grams of sugar per serving! When I figured out how many teaspoons that was for the whole container, it was 36!! It makes it easy to see how the average American eats around 123 lbs of sugar per year.
You can add superfoods like Maca root powder and no-one has to know!
What is maca? It’s a superfood root that is ground down into a powder and it has amazing health benefits! It has a bit of malt like flavor, which makes it a good addition to desserts or smoothies. Certain plants and herbs help your body naturally adapt to the stresses of life. These are called adaptogens and maca root is just that! Raise your hand if you could use help with stress! Maca root also can give your mood and energy a boost! On top of those great benefits, it can improve sexual health, balance estrogen levels, and regulates hormone levels.

No Churn Peanut Butter Maca Ice Cream
Ingredients
- 1 can coconut milk not light
- 2 teaspoon maca root powder buy maca root here
- ½ cup unsweetened peanut butter
- ½ teaspoon pink salt
- 2 teaspoon real vanilla extract
- ¼ cup sugar + 2 tablespoon maple syrup
- ¼ cup chocolate chips plus 2 tablespoon reserved for the top
Instructions
- In a medium-size mixing bowl, measure out all ingredients except chocolate chips into mixing bowl.
- With a hand mixer, mix until all the ingredients are well incorporated.
- With a wooden spoon, mix in ¼ cup chocolate chips.
- Line a loaf pan with parchment paper.
- Pour ice cream into lined pan, and place in the freezer.
- About a half hour or so after you start freezing, sprinkle reserved chocolate chips on top.
- Continue to freeze for about 5-8 hours or until hardened all the way through.
- When you're ready to serve, let set on the counter for a few minutes to become soft enough to scoop
