Gluten-Free Peanut Butter Cookies
These gluten-free cookies are healthier and made with almond flour and less sugar!

- 1 cup unsweetened organic peanut butter
- 1 egg
- ½ cup brown sugar packed
- 3 tablespoon coconut oil softened
- 1-½ cup almond flour
- 2 teaspoon vanilla extract
- ¼ teaspoon pink salt or sea salt
- ½ teaspoon baking powder
Preheat oven to 350
In a medium bowl mix together all the ingredients with a wooden spoon. If your coconut oil is solid you can melt it.
Spoon out even amounts of batter onto a cookie sheet, about a tablespoon or tablespoon and a half per cookie.
With your fingers or the bottom of a measuring cup press the cookies down to flatten them.
With a fork make hashtag signs on each cookie.
You can lightly sprinkle a little cane sugar on top if you would like for a little extra sweetness.
Bake for about 20 minutes or until done!
Make sure to let them cool before removing them from the baking sheet so they can harden up.
