Breakfast for dinner is a sure thing each week in our house. It’s a quick dinner idea everyone loves! Quiche is one of their favorites! Who wouldn’t love the flaky buttery crust and the wide range of delicious fillings you can put in a quiche! I love asparagus and this asparagus quiche with red bell pepper and cheddar cheese is a yummy and hardy dinner!

Every spring we see asparagus on display at the grocery stores for cheap prices. During that time I always have asparagus in my fridge. Not only does it taste great but it can be used as a side dish or incorporated into the main dish! Here, with this asparagus quiche, I’ve made it a main dish and I think you’re going to love it!

Why you should incorporate asparagus into your diet!

Asparagus is super healthy and if you’re not eating this super vegetable it would be a great addition to your diet! With a little help from one of my favorite doctors (Dr. Axe.) let’s look at some of its amazing health benefits.

  • Ranked among the top veggies for its ability to reduce the effect of cell-damaging free radicals!
  • Full of vitamins A, C, E, copper and iron.
  • Asparagus is full of antioxidants and anti-inflammatory properties which is important in disease prevention.
  • It has been used as a medicinal vegetable for 2,500 years!
  • Know for its diuretic properties.
  • It helps to maintain healthy blood pressure and cholesterol.
  • It can also help protect against infections in the urinary tract!
  • Full of fiber.
  • Good source of vitamin K which is great for bones.
  • It can help protect against cancer.
  • It contains the antioxidant glutathione, which is found to slow the aging process and break down free radicals!
  • Asparagus is prebiotic which helps to feed the probiotics in your gut. If you aren’t eating or taking probiotics, check out this post on the benefits of probiotics!

How to make asparagus quiche your own

Not a fan of red peppers? you can mix and match your favorite veggies! Just make sure to saute them and add a little salt and pepper first to help bring out the flavor. Here are some other add-ins you could add!

  • Mushrooms
  • Spinach
  • Halved cherry tomatoes
  • You can add other cheeses like swiss, feta, or even brie!
  • Meat lover? You can add chopped ham, sausage, or bacon.
  • If you are gluten-free, you can make this into a frittata by skipping the crust!

You can serve quiche with fruit salad, spinach salad, or fried potatoes!

Asparagus Quiche

Flaky buttery crust filled with eggs, cheddar cheese, sauteed asparagus, and red bell pepper!

Ingredients

  • 1 pie shell for my homemade pie shell, I will link the recipe in the recipe notes.
  • 1 bunch asparagus
  • ½ red bell pepper cut in long slices
  • 1 teaspoon of each salt and pepper - divided ½ teaspoon of each for sauteing veggies and ½ teaspoon of each for seasoning eggs.
  • ½ tsp fresh or dried thyme
  • 8 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese plus a couple of tablespoons to sprinkle on top
  • 1-2 tablespoon olive oil or refined coconut oil

Instructions

  • Pre-heat oven to 375.
  • In a deep-dish pie dish put your homemade or pre-made pie crust in the bottom (i use a 2 ½ inch deep pie dish)
  • Wash then cut about 2 ½ inches off of the ends of the asparagus (because that part of the stem is tough)
  • In a frying pan over medium heat, season veggies with salt and pepper and thyme and cook asparagus, and red bell pepper until lightly browned, about 5-7 minutes.
  • In a medium mixing bowl whisk eggs, milk, and ½ teaspoon salt and pepper until mixed really well.
  • In the bottom of the pie crust add 1 cup cheddar cheese.
  • Pour over whisked eggs.
  • Arrange sauteed asparagus and red pepper on top of the egg.
  • Sprinkle of couple of tablespoons of cheese on top if desired.
  • Bake in preheated oven for 35-40 minutes or until brown on top. If you are not using a deep-dish pie plate it may not take as long!
